Vegetarian Points to Ponder

Hello there blog buds!

Recently, one of my Facebook friends posted a link to an article from the NY Daily News about how becoming a vegetarian can help save the planet.  (Thanks Sonya!)  It was a quick read and an interesting article so I thought I’d share it in case any of you are interested.  I’m not fully vegetarian (yet), since I do eat the occasional piece of tuna, salmon or shrimp — I guess that makes me a “pescatarian”.  But I’ll be honest here:  the more I read up on the topic, the faster I think I’m headed toward full-fledged vegetarian, and possibly vegan at some point.  Not too long ago, I received an email from a friend and reader who asked if I’d commented somewhere on the blog about why I don’t eat meat anymore.  So I figured this would be a good time to touch on it.

There were a number of reasons that propelled me to give up meat (excluding fish):  digestion troubles, studies linking consumption of animal protein to disease, animal treatment, and environmental impact of factory farming were the big ones.  I had been headed in this direction but the movie Food, Inc. was what ultimately pushed me off the fence. 

I’m not writing this post in an effort to change anyone’s mind by any means.  As I’ve stated in the past, we are each on our own journey and will find what is right for us in our OWN time.  But what I would like is for each person to consider their own health and wellness, and spend some time on educating oneself with further reading.

One book that I find to have a very down-to-earth perspective is written by Mark Bittman, called Food Matters:  A Guide to Conscious Eating.  What I respect about Mr. Bittman is that he isn’t asking people to give up meat completely.  He’s not a vegetarian.  But he does write about the impact the meat-packing industry has on the environment.  So he only eats meat with dinner.  Anything before that is vegetarian.  Here are two quotes from the first chapter of Food Matters:

“60 billion animals are raised each year for food - ten animals for every human on earth.   The projection is that just to sustain current consumption levels, by 2050 we’ll be raising 120 billion animals a year…  Even if we could find the space to meet the demand, the number also assumes the atmosphere, land, and oceans could tolerate it.”

“The only way to reduce factory farming is to demand less meat.”

“…meat consumption would have to fall to about three ounces a day just to stabilizes the amount of greenhouse gases produced by raising livestock.  And stabilizing production isn’t going to cut it, since even at current levels global warming is deadly.”

I also happened upon a book called The Rave Diet by Mike Anderson while I was at the library on Friday.  I took it home with me and made an initial scan-through and am now going back to look more in depth.  It’s definitely a stricter program than I follow now, but the author does include plenty of references and resources.  I also saw that he has a documentary called Eating.  Well wouldn’t you know that while I was channel-surfing Friday night, our local PBS station was showing that documentary!  (Talk about cueing up the Twilight Zone theme right there…)  While the documentary appears somewhat low-budget, the message really hits home about moving to plant-based nutrition.  One fine point made in the show is regarding cancer:  the only actual CURE for cancer we have right now is our own immune system.   That makes me want to take even better care of my immune system NOW.  I am terrified of cancer TREATMENTS.   I’ve recorded Eating and am about halfway through.  What I’ve seen so far is very compelling and I’m looking forward to seeing the rest. 

Like Bittman, Mr. Anderson covers the impact on the environment in Eating.  For example, the average American uses 106 gallons of water per day for our domestic activity.  If that same average American ingests just ONE quarter-pound fast-food burger they have upped their usage to 3,106 because it took an extra 3,000 gallons of water for the 1/4 lb worth of that cow to be raised and processed.

Basically, to answer the question posed to me about eating meat, I’d arrived at a point where (personally) I felt there were enough questionable issues with consuming meat that the RISKS began to outweigh any BENEFITS.

A very ugly brown (but SUPER tasty) green smoothie (acai smoothie pack, 2 fists full of spinach, 2 stalks celery, 1/2 large cucumber, 2 tsp white chia seeds, handful of sprouts, 1 pear. Ppurple ACAI + green SPINACH = not so pretty photo!

Lunch was out at Tokyo Joe’s:  tofu + brown rice, with mushrooms, long beans, zucchini, broccoli and snow peas with curry sauce on the side.   Half of this bowl came home in a doggy bag!

Soup-n-sandwich dinner:  pita with tomato, cucumber and avocado, with leftover squash soup.  I am still SO in love with this soup!img 896

And an after-dinner herbal drink compliments of Cindy (who included some fun new teas for me to try when she mailed my beautiful scarf!)  Cindy, that is a GREAT tea flavor – I’ve already added it to my grocery list!  Thanks for sharing!

We had a wonderful (and brisk) 2.5 mile sunset walk with the dogs which capped off the weekend perfectly! 

Does it really have to be Monday?  I’d love to rewind back to Wednesday night and enjoy this holiday weekend all over again!

Plenty of Green on Black Friday

Where is the long weekend going?  It’s FLYING by way too fast!  So much to accomplish this weekend, so little time left…

We did get this done yesterday:

And the outside lights are done too, along with the wreath and lighted door swag.   Wahooo for the 68 degree weather in which to hang outdoor decorations – Mother Nature if you could do that again on January 2 I’d be ever so grateful! 

We attempted to hit up Kohl’s at about 11:00 AM thinking some of the crowds would be gone (ha!! not so much!)  Getting in and around was the easy part.  But once we saw the LINES for the checkout … LITERALLY WRAPPED AROUND the inside of the store … I told MSP there was no amount of money we could save that would make it worth standing in THAT line for the next hour or more.   Someone else can get 50% off the $10 Barbie, thank you very much.

Apparently I am more motivated by FREE TIME than I am by MONEY:)

Salad ‘fixins’ included spinach, dulse, yellow corn, nutritional yeast, one cooked egg, tomato, chia seeds, a drizzle of Annie’s Goddess dressing, and half an avocado. 

I also attempted taking Rascal out with me for a run but (much like the Kohl’s visit) I turned around shortly into it because he was all over the place and messing with my running mojo!  He got a short 1.5 miles – then I went back out to finish an additional 2.5 miles ALONE (and in a nice, neat straight line).   Riley was NONE too happy to be left home – but knowing her, she’ll cause us to end up at the emergency vet and that would put a serious dent into my already limited xmas shopping budget.  Her exercise will have to be limited to chasing her ball around the back yard until she can find a way to pay for her own healthcare!  ;)

Have a SUPER Saturday!  I’m considering another Kohl’s attempt… if I don’t put up a new blog post for the next 3 days you’ll know I’m stuck in the neverending checkout line!

Thanksgiving Full of Kale

Hello again blog buds!  Hope you have had a productive “Black Friday”!  I have, but I’m still WAY behind in my xmas shopping!

To recap our Thanksgiving, it was an absolutely BEAUTIFUL day!  It started a little too early for my taste shortly before 4:00 AM, but sometimes that’s just when my body decides it’s time to get up.  I spent the early (and QUIET) morning hours writing yesterday’s blog post, then catching up on my recorded chick-shows while the rest of the household members were sleeping.

We started the morning with the SOYsage Gravy and Biscuits (recipe in the Build-A-Meal tab if you didn’t see the post).  Then because it was over 60 degrees outside :)  we went out for a hilly power walk.  It was only 3.26 miles, but since the hills were steep we felt like we got a great workout (at least that’s what my glutes and calves told me!)  

I had a green smoothie when I returned.  I’ve been missing these the past week!  Some days when I feel chilly, a green smoothie just doesn’t always sound good because the idea of it makes me feel chillier!  Luckily it was warm enough yesterday to crave one.   Still rockin’ the festive green & red thanks to the cranberries.

Later I made a BIG batch of baked kale chips.  Two trays of kale.  And guess what I did?  I ate it ALL!!!  Every last bite of kale!  I didn’t INTEND to eat all of it – I INTENDED to make it for something to snack on during the Broncos game.  When it came time to actually sit down to our Thanksgiving meal, I wasn’t very hungry – I’d eaten THAT much kale!  :)   I guess if you are going to overeat something, nutrient-rich kale would be the food to choose!

We each had some time to relax for a bit, then it was time to make phone calls to family members & time for me to get busy in the kitchen (with cooking, that is!) 

Finally time to eat our holiday meal!  Wahooo!

Here is MSP’s Thanksgiving plate:  roast turkey breast and mashed potatoes, both covered with gravy, along with some mac-n-cheese spirals, cornbread and unpictured Crescent rolls (because truly it’s not Thanksgiving without Crescent rolls!)  Oh, and a side of beer!

And here is my plate (or bowl, I should say):  Heavenly Ginger Curry Squash soup, with a side of 1/2 baked sweet potato.   And a glass of Riesling on the side.  It doesn’t look like much, but it definitely filled me up.

I had also intended to make a sweet & savory broccoli salad, but to be honest I was so darn full after eating the kale that more greens just didn’t sound appealing at all!  We both had PLENTY to eat and were soon relaxing on the couch to take in some football and a movie.  (FYI “Funny People” with Adam Sandler is anything but FUNNY — just a heads up.)

Even the puppies got a little GREEN action in their bowls for the holiday – here’s Rascal chowing down on chopped organic cucumber and sprouts:

Overall I had a VERY healthy Thanksgiving.  My only real ‘splurge’ for the day was a piece of apple pie.  It clocked in at 580 calories, so rather than flood my system with more calories in one sitting than it should handle, I cut the pie into two pieces.  I had one-half late afternoon, and the other as an evening snack. 

You know your “Healthy Holiday Eating Plan” was a success when you hop on the scale the day after Thanksgiving to find that your weight is down 3/4 of a pound from what it was the day BEFORE Thanksgiving!  Now that is something for which to be thankful!  ;)

SOYsage Gravy and Biscuits

Hello there FitFeat friends!  I hope you had a fantastic Thanksgiving!  I know we did!  I’ll write a separate post to recap our holiday, but wanted to put a recipe out for you vegetarians/vegans who would like to make a tweaked version of Sausage Gravy and Biscuits.

MSP loves the original recipe.  Because it was so high in bad fats and flour, we only made it on a holiday, once or twice a year.  I didn’t want to have to sit out on the fun, so this year I decided that I’d try to substitute some ingredients to make it something I would eat too.

SOYsage Gravy & Biscuits

  • 1 tube of Gimme Lean non-meat ‘sausage’
  • 1/4 cup flour
  • 2 cups almond milk (or soy, skim, whatever you drink)
  • sea salt & black pepper to taste
  • 6-8 biscuits of choice

If you are using biscuits that require oven time like we did, start those first as the rest goes really fast.  Our biscuits took 9 minutes in the oven.img 866

Brown the Gimme Lean in a pan sprayed with olive oil over medium heat, crumbling as you go.  It gets easier to crumble the more it cooks.img 867

Once the ‘sausage’ is fully browned, sprinkle the  flour into the pan until the ‘sausage’ is well coated.

Add the first cup of almond or soy milk (still over medium heat) and stir well.  The ‘sausage’ and flour will soak it up really quickly.img 868

Add the second cup and continue to stir well.  Now the gravy will really start to build.  Add sea salt and pepper to taste.  Keep stirring until warmed through and at a consistency you like.  If you like a thin gravy, you’ll want to remove it pretty quickly and/or add more ‘milk’.  If you like it thick, stir longer over the heat and you’ll find that it gets really thick really fast. img 869

My version was only 255 calories per serving (2 small biscuits of 50 calories each and 1/4 of the gravy).  And it is FILLING!  Enjoy!img 872

Gooooooood Moooooorning blog buds!  Happy Thanksgiving!

I have so much to be thankful for.  I know, I should be writing about how I’m thankful for my health, family, abundantly happy life, yada yada yada.  You guys are gonna get enough of that around the dinner table today.   ;)   So here are some of the things for which I’m secretly giving thanks today!

A Sparkle in MY Day!

It’s Thanksgiving Eve!  Do you have all of your ingredient shopping done for the food-fest tomorrow?  I’m going to attempt to sub out ingredients in our favorite Sausage Gravy & Biscuits for tomorrow’s breakfast to make it free of meat and dairy.  It will be SOYsage Gravy & Biscuits.  If it turns out well, I’ll be sure to post the recipe here for you all to try.  I also plan to make a broccoli salad with some subbed items – I’m hoping that by STEAMING the broccoli I don’t end up with houseful of broccoli stink again!

Before I get into yesterday’s eats, I want to send a VERY BIG HUG OF THANKS to dear Cindy over at A Sparkle A Day.  She lives in California where it is nice and toasty and she took pity on me freezing my hiney off with all this cold and snow we’ve had already this year.  As a result she has put a lot of hours and generosity into making me something with which to keep warm and it arrived in the mail yesterday like an early Christmas gift.

She knows me well, sending a homemade card with COFFEE on the front!  Look how pretty it is!

It is SO incredibly soft and warm!  It was meant to keep me warm while jogging, but I think it’s much to pretty too use that way.  I wore it out with my dressy coat last night to run some errands and the cashier at Hobby Lobby commented that she loved my scarf and how pretty the colors were!  So of course I had to tell her the story of who made it for me and why and that I’d just received it that very evening!

Cindy, thank you so much for your kindness and thoughtfulness… It is amazing how receiving a HANDMADE gift can make one feel so special! 

Now I see why my mom loved that crazy thing I made her in kindergarten:  a paper plate with dry macaroni glued all over it and spray painted GOLD!  :)   If you are thinking of holiday shopping this time of year, I highly suggest you MAKE something instead.  It truly does make the recipient feel so good!

Yesterday was another one of those whirlwind days.  I started the day off with a cup of coffee and half a banana bread Larabar before my client training appointment.

Then I ate the other half while I was writing yesterday’s blog post.

Lunch was an unpictured HUGE salad at Sweet Tomatoes full of spinach, beets, zucchini, cucumber, sunflower seeds, olive oil, red cabbage, and probably a few more ingredients that I’m forgetting.  If you haven’t been to a Sweet Tomatoes salad bar, give it a try.  Talk about getting your VEGGIE FIX ON!

Afternoon was full of more running around.  I had to splurge on a little Silk Soy NOG.  MSP loves eggnog this time of year, and I wanted to join in on the fun in my own way!

Dinner was leftover pad-thai-style rice noodles from Noodles & Co., half of which seemed to be mung bean sprouts (and 2 whopping pieces of shrimp!)

This morning I got up and did 30 minutes of a total body weight training circuit.  It’s one I developed for training clients, so it’s not listed here publicly (SOME things have to be kept sacred for my paying peeps, you know!)  :)   Followed by 45 minutes of DOG WOGGING!  Have you noticed how lacking my life has been of wogs?  My poor pups must feel so neglected.  And of course Riley collided with another dog at full run while they were being playful and came up limping.  (She has hip dysplasia and arthritis, yet thinks she’s still a spring puppy!)  She seems ok at the moment – but of course in the back of my mind I’m thinking she’s never allowed out of the house again if she keeps hurting herself!  If it’s not poking her eye out on a hike, then it’s dislocating a hip!  Crazy dogs!

And now I am taking in a PROBIOTIC overload because I am off to a hospital soon to visit a post-surgery family member and want to give my immune system all the boosts I can in case I pass someone in the hall that has swine flu (or some other nasty bug that I don’t want taking a free ride home with me!)  :)    Two probiotic pills and a probiotic-rich BUBBLY!!!  mmmm Gingerberry!  I can feel the forcefield all around me already!  ;)

ZPizza, Zupa and … Frosted Turkey!

Hello blog buds!

I hope you didn’t think I stopped taking photos of all my food since my recent posts have focused a bit more on recipes or tips for staying fit during the holidays.  I haven’t stopped exercising either!  ;)   I’ve just been aiming to give you more quality content.  Allow me to do a little rewinding to the weekend and fill you in!

Saturday was time for some SOCIALCIZING!  I met up with one of my girlfriends for a wonderful hour-long power walk on a chilly morning.  It was crisp and refreshing.  Then we hit up Starbucks where not only did I have Zen green tea, but I also saw that they have finally released a DECAF version of their VIA instant coffee.  (It does NOT taste like instant at all!)  So of course I had to buy a few to bring home and sample.  I’m sold!

Sunday left me really wanting to get out and do a long slow run.  I haven’t been running much over 4 or 4.5 miles at a time this summer and fall.  And when Matt from No Meat Athleter reminded me of the genius that is Stu Mittleman’s Slow Burn, I figured it was high time to get out and just do a “comfy run”.  It was great.  I did 6.66 miles (yes, can you believe that’s the number my loop ended on… ??)  My pre-run fuel was a very Thrive-ish Coconut Cream Pie Larabar.  Stu may think that’s too much sugar – we’ll see when I re-read his book.  It’s been so long since I read it that I went ahead and ordered a copy to have for myself this time.  But no matter what he says, I will tell you that the Larabar was PERFECT for my energy levels for the run.  I’ve really found that particular flavor does the trick – thanks to the dates and the coconut oil ingredients.

I knew that I needed to get in a good meal to replenish the bod after the run so I made a Breakfast Quesadilla.  Here it is before I put the “lid” on it:

Zucchini ribbons, a tiny bit of grated raw goat cheddar, spinach, tomato and a scrambled egg.  Served after baking for 10 minutes at 375 with a side of 1/4 sliced avocado:

 For lunch, MSP treated me to Zpizza where I ordered the “Berkeley Vegan” on a wheat crust with mushrooms, organic marinara, zucchini, veggie burger crumbles, red/green pepper and tomato slices.  It used to be that they used soy cheese and have now switched to vegan cheese (since most soy cheese still contains casein, a milk derivative.)  I’m not sure what to think about this new cheese – I’m thinking next time I’ll just go without any cheese at all, vegan or otherwise.   Here is their small pizza, from which I ate 2 pieces and brought the rest home.

That night I was all over the Whole Foods SPICY PUMPKIN SOUP.  And they aren’t lyin’… it’s got kick.  With a whole lotta onion!  Mmmm, so good on a chilly night.  Doesn’t quite beat my Heavenly Ginger Squash Soup, but it’s much more convenient!

And the only turkey I’ll be eating this holiday week is the one made of frosting on my 99 cent mini-cupcake…  I love the Whole Foods bakery!  SOOO CUTE!

You know I love my little treats on the weekend.

Monday was a complete and total blur!  Busy busy from the time I got up till the time my head hit the pillow last night.  I still feel now like I could use a nap!  :)   I think instead I need a BIG HUGE GREEN SMOOTHIE as they have been missing from my life since last week.  Poor blender isn’t feeling the love.

Today I have a training client, a haircut, lunch with friends, shop for Thanksgiving food prep items, and if there is any time left I’ll try to get started on my xmas shopping.  Possibly a stop at a local tailor.  If anyone is in the South Denver area and can recommend a good tailor, please drop me a comment!  ;)  

Today’s question:  are you feeling stress-free and ready for Thanksgiving (and the subsequent holiday hub-bub) or do you feel like you have a million things left to do and not enough hours in the day to do them?  I am in the latter category, and I’m not even hosting Thanksgiving!!  :)

Stay Fit Strategies for Thanksgiving

Hi FitFeat friends!  Happy “short-week” Monday!  Now that Thanksgiving is almost here, I think I’m finally officially in the holiday spirit!  People in our neighborhood started putting up holiday lights this week since it was a nice weather weekend.

I know this week is going to start getting busy so I wanted to cover some “Stay Fit” strategies today, so that you can be thinking it over before the holiday arrives and before you are so busy that reading blogs moves down the list of things to do!  ;)

I saw a news segment this weekend that the average Thanksgiving meal is 2500 calories!  In ONE MEAL!  They were discussing lower-calorie recipe alternatives to bring the meal down to 1200.  My friends that is STILL too much to consume in one sitting. 

Here are a few of the strategies I’ve put to good use over the years.  I’ve been successful at keeping off the 35 lbs I lost 9 years ago – hopefully you’ll pick a few tips (or all of them) to use yourself in your own journey to get (or STAY) fit. 

Get in a good workout the morning of Thanksgiving
Thanksgiving is one day you DON’T want to take off from exercise.  Chances are you will be taking in many more calories than usual, so you can at least mitigate some of the damage by burning some calories and depleting your glycogen stores. That way when you do eat, some of it will first go toward replenishing those stores. Turkey Trot 5K/10K races are a great way to get the day started with some fitness.  If you can’t get out for a run or hike, aim for a full body workout focusing on the larger muscle groups of the body.

Stay hydrated (and feeling full) with water and no- to low-calorie beverages
Make sure you keep your water intake high so that your body doesn’t send you thirst signals that you may mistake for hunger. 

Fill up on veggies first
Before you dig in to the high calorie, richer items focus on getting in your healthy items first.  This way you’ll be increasing your fiber and nutrient intake as well.

Stop eating as soon as you start to feel full
There is no reason to eat until you are stuffed.  It causes great stress on your body and makes you feel sluggish.  Eat until you begin to feel satisfied.  Then put the fork down.  When food tastes amazing, it’s too easy to keep eating simply because “it’s too good to stop”.   And don’t let friends/family pressure you into joining the “clean plate club”.  You are an adult – you get to decide when you are done.  Let the turkey be the only thing STUFFED that day.

Truly savor what you do choose to eat
Don’t scarf down your food.  Eat slowly and enjoy all the time, flavors, and LOVE that went into each bite of what you are eating.  Read an earlier FitFeat Post about chewing and digestion.  Put your fork down between every bite. 

Keep your goals in mind
If you are working toward a weight-loss goal, please keep that in mind.  You know you need a 3500 calorie deficit just to lose ONE POUND in a week – so when you hear that the average holiday meal may be upwards of 2500 calories it’s easy to see how quickly you can undo some of your hard work.   The average female only burns 80 to 100 calories per mile walked or jogged – think about that when you are eating a 600-calorie piece of pie.  Ask yourself if it’s worth the 6+ miles it may take to work it back off.  It might make you want to cut that piece of pie in half.

Stephen Gullo, Ph.D., writes about strategy being stronger than willpower in The Thin Commandments and urges you to tell yourself, “There’s not a single food that I’ll see today that I haven’t seen or tasted before.  I have seen it all, I have tasted it all, and it hasn’t made me happy; it’s only made me heavy.”  That has always resonated with me and helped me step away from foods that I know I might not want to stop eating once I take a taste.  If you have foods that trigger you to overdo it, don’t even start.

Eau du Broccoli

Happy Saturday!  My favorite day of every week!  I hope you had a fantastic Friday.  Mine was bueno:  it was so nice to get back to my regular eating schedule.  I seems like my eating has been a little erratic this week.  I would miss an afternoon or mid-morning snack and then after dinner I would feel like I hadn’t had enough to eat and was experiencing crazy cravings.

The day started with a trusty old friend:  1/3 cup old fashioned oats (measured dry for those of you wondering), sprinkled with some raisins, unsweetened coconut flakes and cinnamon.  Mmmm.  Coconut was meant for oatmeal.  It seems like such an odd combo, but it is fantastic!

For lunch I had the leftover veggie enchilada from Thursday’s visit to Three Margaritas, with a side of stinky broccoli.  More on the broccoli later…

After lunch I needed a “dessert” so I grabbed a medjool date.  Perfect little snack to squelch that sweet tooth!

And later a beloved Lemon Larabar…  Larabar, it’s been a few days.  I’ve missed you!

MSP wanted his favorite for dinner (Chipotle) before heading off to poker night with the fellas and my tastebuds just weren’t in the mood for the spice and onion overload.  So while I was out picking up his dinner, I swung through Whole Foods to wander around uninterrupted grab something from the salad bar.  I left with a $26 grocery bill (not bad considering that it’s usually over $40 there, AND $5 went to a donation to the Women’s Crisis Shelter.  But then again, I had just come from Vitamin Cottage, where I spent $21 so see… I’m right back at $40+ for a “quick trip to the store”.)  But if it meant I got to eat these beautiful treats for dinner, then it was well worth it:

Sesame emerald kale, gigande beans, and quinoa pilaf with roasted red peppers.  I should take a picture of these beans next to something to give you a reference of their size next time.  They truly are GIGANDE!  Every once in a while you see one with vericose veins!  I’m not joking!

And because I was feeling a definite lack of greens in my day, I couldn’t resist trying a new BUBBLY flavor, aptly called multi-GREEN.  ;)

And still I was craving more veggies, so for “dessert” I had a spinach salad with leftover roasted mushrooms and my homegrown crunchy sprouts

Ah, that did that trick.  Full now. 

So back to that stinky broccoli…  the other day I had this idea to bake broccoli, much the same way that I do with kale.  I had about 3/4 bag of florets left in the fridge…

…so I tossed them with some macadamia nut oil and some nutritional yeast and put them next to the mushrooms I was getting ready to roast.  Cooked ‘em good at 350 degrees until they started to get brown tinges on the edges.

While I definitely loved the flavor of the baked broccoli (tasted an awful lot like baked kale, who knew?) I most definitely did NOT like the stench that was left hanging around.  It was so BAD!  If we left the house and came back, it smacked us good and hard in the face each and every time we walked back in the door.  Putting the leftovers in the fridge made it exponentially worse.  I wasn’t even really in the mood for broccoli with my leftover enchilada, but I couldn’t take the stanky stink any longer. 

I have never experienced that with broccoli before.  I will have to pay closer attention to how I prepare it.  I want to make a broccoli salad for Thanksgiving, but now I’m thinking I may have to run down to Tokyo Joe’s and just place an order just for steamed broccoli to use in the recipe so that I can keep the house smelling nice that day! 

Another lesson learned: (one that I think I’d read one time about cruciferous veggies and methane, and made the mistake of not committing to memory):  there is a limit to how much broccoli should be consumed in one sitting.  Scarfing down half a bag of baked florets was not a smart idea.  I want to save you poor souls (and the poor souls standing within smelling distance) from this horrible misstep.

Orange You In The Mood For French Toast?

Good morning friends!  Happy Friday! 

Can you believe that one week from today Thanksgiving will be behind us and we’ll be out fighting the Black Friday shopping crowds?  Is 2009 really almost over?  One week from today I’ll be putting up my Christmas tree and ‘inside’ decorations. Outside decorations will be done whenever we have a warm(ish) day. 

Thinking about Thanksgiving yesterday had me craving breakfast for dinner.  (That and I just was NOT in the mood to zip to the store so I had to come up with something from what we had in-house already.)

I tried to be creative and made up this dish:

Mandarin Baked French Toast Fingers

  • 6 whole eggs (organic, free-range)
  • 1/2 cup MimicCreme (or something like FF half-and-half if you are a drinker of dairy)
  • 2 Mandarin oranges (or one regular orange)
  • 7 slices Ezekial sprouted grain bread

-Crack eggs into bowl and add MimicCreme.  Using a zester or microplane, zest the skins of both mandarin oranges into the bowl.  After zesting, cut each orange in half and squeeze the juice into the mix.

-Whisk well.

-Make two stacks of Ezekial bread, cutting through each stack twice lengthwise to create the ‘fingers’. 

-Dip each finger into the egg mixture and add to a prepared baking dish (I used my large round stoneware baking dish from Pampered Chef.)

-Pour remaining mixture into baking dish after all pieces are coated.

-Let sit in the refrigerator for one hour so that the egg mixture soaks into the bread really well (the sprouted grain bread is dense).

-Bake at 350 for 35-40 minutes (my toast fingers were double-stacked.  If yours are in a single layer they may take less time.)  Cover for most of the cooking time so they don’t get really dry.

-Or make your french toast in a pan on the stovetop like ‘regular’ french toast rather than baking.

-Once plated, garnish as you like.  I sprinkled on unsweetened coconut flakes and some cinnamon, then used agave nectar as my “syrup”.

I think next time I make this I’ll try the regular french toast version on the stove top.  The baked version didn’t have a very pretty presentation, but it had really good flaver with all that orange zest.  Breakfast for dinner is always fun.

The rest of the day’s eats went like this: 

Half of a banana before my 6:15 AM training client. 

A beautiful 30 oz GREEN SMOOTHIE after my 45-minute arm-killing Iron Yoga session.

Lunch out with MSP at Three Margaritas.  I’ve been craving their Veggie Enchiladas for weeks now.

It’s probably the healthiest meal I’ve every discovered at a chain Mexican restaurant.  Sauteed veggies like broccoli, cauliflower and carrots tucked inside a corn tortilla and topped with CARROT PUREÉ.  So good.  I ate half the plate and brought the other half home.  And ate the cold leftover beans for a nighttime snack.  MSP thought that was the nastiest thing ever.  (He doesn’t like cold pizza either!!!  I can eat any food cold..)

Today’s discussion is on the topic of Thanksgiving:  What foods are on your menu?  Are you cooking at your house?  If you’re a vegetarian or vegan, what are some of your favorite things to serve?  Or do you have a favorite dish that you like to take when you go elsewhere for Thanksgiving? 

We don’t go anywhere for Thanksgving.  Most of our relatives are all out of state.  Sometimes we go out to eat and hit up the movie theater.  Last year (when I still ate meat) we picked up a full meal from Boston Market for our ‘turkey dinner’ and we loved it!  It was fast and fun.  This year, I’m aiming (keyword is aiming) to do some fun cooking at home, depending on the budget.  (My list of ingredients for the things I want to make may cause me to NOT make some of them – then I’d just be spending all that money I’ll be saving on the Friday xmas shopping!)   We always like to make a yummy breakfast on Thanksgiving so I’m thinking of tweaking a favorite recipe for Sausage Biscuits & Gravy into a vegetarian, non-dairy version.  Still working on the ideas for that one.  MSP would also LOVE some bread pudding so I’m thinking of making a Chocolate Croissant bread pudding recipe for him (too rich and full of dairy for my liking so that will be all him!)  I also have my eye on a recipe for vegetarian Almost Beef Wellington as the ‘main dish’ for the day.  We’ll see.  ;)   I always have grand ideas for cooking!  If we have GORGEOUS weather that day, it may all get thrown out the window so that we can get outside for a hike!
