Recently Green

Hey FitFeat friends!

Remember when all I did was post about my food?  Ah, the good ol’ days. ;)   I think of them often and fondly.  How about a few food pics to show you some recent eats?  Just so you don’t think I’m still living off of leftover Easter creme eggs or something!

This was a HUGE Mediterranean lunch salad I made at home with grape tomatoes, Kalamata olives, cucumber, chickpeas, chopped mixed greens, dulse, nutritional yeast, red onion and a red wine vinaigrette.

The following day I made a similar salad, but changed it up a bit using dino kale and chopped parsley as my base, added in some leftover quinoa and tossed it in a homemade balsamic vinaigrette.

Some recent recipe testing yielded this Wasabi Slaw salad that I’ve since added to my personal chef library – I love all the colors in this one!  Red cabbage,  dino kale, red onion, red bell pepper, sesame seeds and a wasabi dressing.  One of my new favorites!

During an evening of recipe testing, I was making seitan skewers over cauliflower & quinoa ‘rice’ with a tandoori-style dressing.  Cory and I both loved the skewers with the ‘rice’ but the sauce still needs work.


The next day I repurposed two different sets of leftovers into a collard leaf wrap.  Half of the leftovers were the seitan and ‘rice’ from above and the other half were from a vegetarian antipasto appetizer plate I’d brought home from a local Italian restaurant (roasted asparagus, mushrooms, peppers, etc.).  It worked!

Sunday afternoon we hit up one of our favorite sushi restaurants where I had my usual:  a seaweed salad and some sort of veggie roll.  This time I tried the asparagus tempura roll.  Delish!  Seaweed salad is something that I have yet to make taste like it does in a restaurant.  Think they’d let me come watch & take notes for a few days?  :)

I am still in the process of drafting my post about my thoughts on VegFest – I hope to set some time aside to get it wrapped up in the next day or so.  I should probably change that old header up there while I’m at it – that haircut was from November of last year!  Yikes!  Apparently I could desperately use some people to donate time for dishwashing and blog updates!  ;)    Have a great day friends!
