Too Much White and Not Enough Green

Hi blog buds!

If you are a Colorado resident, hope you enjoyed the snow day on Friday.  For those of you not in CO, we had a solid snowstorm, dropping about 2 FEET of snow on most of us along the outskirts of Denver.  (I heard Blackhawk got FOUR feet!)

Not sure if this happens to other people, but there is something about a blizzard that makes me LAZY.  I didn’t work out all weekend and I ate a lot of starchy comfort food.

I do blame part of the food on having received this as a birthday gift:

Excitement just doesn’t cut it!  I’ve always wanted a stand mixer.  Now I finally have one!   (Thank you to my sweet husband for adding to my kitchen gadget arsenal!)

So of course I had to make stuff!  Almond cake, two different batches of dark chocolate chunk cookies, a loaf of yeast-free bread.

This mixer might be bad for my waistline!  ;)

But now that the ‘birthday blizzard weekend of gluttony’ is over and it’s MONDAY, that means my year of “Fit & Fine at 39” commences!  2012 in general has been off to a really great start with fitness and food – now I plan to dial it in even a little further.

The first item on the menu today?  A green juice!

And as I write this I am drinking a multi-green kombucha.  The color tone I plan to set for this year is GREEN.

Have You Seen This Yet?

I made a quick trip into a local health food store last night to grab a few items and I came across something that made me do a double take and then made my eyes bug out of my head!  In a good way! ;)

GT Dave’s is making Kombucha with CHIA SEEDS in it now!  Is that crazy fun or what???

I picked up the grape flavor to try (they also had a cherry flavor in stock).

It tastes GREAT!  I loved it!  It still has that zippy, tangy flavor of my beloved fizzy “booch” but this definitely makes me slow down and savor it a little more because I have to chew the seeds a bit.  Those who are a leary of “texture” in their food/drink might find it takes some getting used to … but if you see it in the stores, pick one up and give it a try!  You can’t help but grin when you have something as fun and funky as this in your glass!  :)

Fun with Fermenting: Water Kefir

Before I get into today’s post topic I just wanted to express my heartache at the devastation in our country’s heartland lately.  Looking at all of the lives and homes lost in the tornadoes this week, the flooding all along the Mississippi River, the Tuscaloosa tornado, the wildfires that burned all over Texas… Let’s all take some time this week to put some perspective into our lives and to be thankful for our blessings.

I’m sure you may have all seen this during the news coverage, but just in case… if you want to do something to help, the American Red Cross could really use donations.  All you need to do is:

And then hug your family and friends today.  And say hello to your neighbors.  There was a story on the news this morning about a group of neighbors who were worried about the 73 year old man who lived on alone their street that they thought was missing after the Joplin tornado.  As it turned out, he was staying elsewhere but when he found out people were concerned, he said he had no idea that people had cared about him.  How touching is that?

In a post last week I mentioned that an upcoming post would talk about water kefir. I’d actually never even heard of it until a friend of mine asked me if I’d like some of her extra kefir grains to start my own.  I was only familiar with dairy-based kefir and coconut kefir.  Game to try new things (and always enjoying growing bacteria in my kitchen, ha ha!) I jumped at the chance.  It’s taken a few weeks for my little grains to really get in their groove but now that they are, I’m enjoying it!  I think it tastes a lot like kombucha but it’s a lot easier and it ferments much faster (and in smaller batches).

There are a lot of different instructions out there, but I found that I like the easiest ones (shocker, right?) where all I have to do is add the grains, the filtered water, and some organic sugar then cover with a coffee filter and rubberband.  Let it sit for about 48 hours for its first ferment.  I’m making mine in smaller batches, so I use

  • 3 cups filtered water
  • 3 tablespoons organic sugar or Sucanat
  • kefir grains (enough to fill about 1/2 to 3/4  measuring cup)

Then you are supposed to strain out the liquid, place the liquid in a second jar with some optional flavoring (I have been enjoying a splash of Açai juice), and tightly cover it with a lid for a second ferment for another day or two to let the carbonation build.  I’ve found that if I leave a few spoons’ worth of grains in my second ferment, I get a lot more FIZZ!  (Which is what I have been missing from storebought kombucha teas lately).

And then you start your remaining grains into another fresh ferment.

My friend Heather who turned me on to this fun drink recommends “burping” the lid of your second ferment once or twice a day to avoid a kefir explosion from the buildup of carbonation.  (Thank you Heather for all the great tips and for introducing me to something new!)

I’m enjoying having something that “feels like soda” to sip on, while not having to pay the crazy price of pre-bottled kombucha.  Not to mention the beneficial probiotic bacteria that supposedly comes from this drink!

Natural Chef Culinary School Recap: Field Trip Day

Hey friends!

How’s your week starting off?  Is it Friday yet?  ;)

So yesterday, in lieu of the usual classroom/kitchen time/cleaning routine, we were treated to a day full of fun field trip stops!

First stop was Celestial Seasonings to tour their tea factory.  It’s quite a production!  Before the tour starts you get to sample their teas.  Sleepytime tea has always been one of my favorite Celestial flavors, and now they have added flavored versions of it!  So I tried the Sleepytime Vanilla and I have a NEW favorite tea.  One thing I like about Celestial compared to a lot of other teas is that their prices are VERY reasonable, yet they seem to use high quality ingredients.

I know that one of Cindy’s favorites is Candy Cane Lane, so I had to get this shot too.  It’s the artwork from the package in their window:

The best room in the tour is the peppermint room.  The mint has to stay separate from the rest of the factory or the oils and aroma would permeate all the other teas and herbs.  So you enter a closed off room where the mint is stored on pallets and you are hit with a wall of menthol.  It’s so strong it makes your eyes water and it clears your sinuses in a hurry!  But it’s so refreshing and you just feel more ALERT after you leave that room.

No cameras were allowed on the tour, so I can’t show you the inside.  BUT… they do have a VIRTUAL tour on their website that you can enjoy by clicking HERE.

The next stop on our field trip was the Savory Spice Shop.  Walls of wonderful spices, from the most common ones to the more obscure.  We were fortunate to have the owner and employees provide us with a section by section tour, explaining a lot of the spices and letting us smell everything.  The next time you use ground cinnamon in a recipe, chances are you are probably actually using CASSIA as opposed to true CEYLON CINNAMON.  The “cinnamon” that is commonly ground on store shelves is generally cassia.  Not that it’s a problem – I just find all the varieties interesting.

After that, we were off to lunch at “SALT the Bistro“:

Here we were joined by a colleague of our instructor’s who is very connected in the Denver/Boulder organic foods marketing realm.  He took the time to ask each one of us individually what we hope to do as a Natural Chef after we complete school and then gave us some ideas on things we could do to get started.  It’s so interesting how we each have something different in mind that we’d like to do.  Mine is to be a personal chef with a weight loss/weight management/wellness focus but I also want to continue coaching people how they can make simple changes to eat better and feel better, via small group seminars, cooking classes, etc.

His biggest tip for me?  Start a blog;)   (Glad to know I’m on the ball!)

And also start offering free cooking demos for local businesses, rec centers, etc., so that they will get to know me and then maybe want to invite me when I charge for that kind of service.

He was a really neat guy, with a very calming presence, yet so incredibly passionate about organic foods and humane treatment of animals that are used as our food supply.  You couldn’t help but be inspired just listening to him speak.  He and a partner have a website called Boulder’s Best Organics where you can order gift basket of… you guessed it… Boulder’s best organic products. ;)   It’s a great website to visit when you are in need of fun and unique gift ideas, or maybe for those people on your list who have everything or are hard to buy for.  You can order pre-made gift baskets or create your own.

Last but definitely not least, the chef of SALT came out so speak to us and answer any questions we had.

It was really a great day and a nice break after all the anxiety of midterm week.  Today I’ll be wrapping up the latest homework assignment.  Tomorrow we’ll be back to our normal class schedule.  This week we’ll be learning about Natural Food Preservation, Raw Foods and Fermented Foods (like KOMBUCHA!)

I’ll enjoy a few “homeworkless” days, then I’ll be right back at it because our next assignment is due January 3rd and I DO NOT want to work on it between Christmas and New Year’s so I’m setting a deadline for myself that it MUST be done by December 23rd.  No procrastination on this one!

Today’s update for the December “Do Something Daily” challenge:  I hit the treadmill for 40 minutes today on an 8 incline while watching an episode of “Brothers & Sisters” (still the best show on TV in my opinion!) and I think tonight MSP and I will tack some more time onto that with a few rounds of boxing (VIRTUAL boxing, that is!)

I may not get to post again until Thursday so I’ll fill you in on my Wednesday activity at that time.

Bottling the Homemade Kombucha

Hi friends!

Happy Wednesday – hope the first half of your week has been great!  If not, now’s your chance to turn it around for the second half of the week, right?  ;)

Well, today’s the big day.  Time to bottle my first successful batch of the kombucha homebrew.  I may have let the culture grow longer than it needed to, but I’d read that it can take up to a month when you are starting a batch without the culture.  I wanted to be sure mine was GOOD and READY.  Judging from the size of my culture, I’d say it was beyond ready!

I removed the culture and placed it in a ceramic bowl:

Boiled my ‘recycled’ bottles for 20 minutes (no directions I read said to do that but I remember when my mom would can things, the glass jars were sterilized by boiling, and I figured it couldn’t hurt!)

Juice for two of the bottles that I plan on flavoring (using açai):

I’m adding 1 oz of juice to a 16 oz bottle of the tea – these funnels I picked up shopping with MSP’s mom this weekend came in handy today!

Stir up the ‘sediment’ in the tea before pouring in a bottle.

The finished product:

I left a little room at the top of the bottles because I’m not sure how much it expands (if any) while it continues to ferment.  The non-flavored bottle in the middle is a little short because I needed some of the remainder to add to my next batch.

I’ll let them sit at room temperature for 2 days, then I can refrigerate from there for up to 30 days.  Hoping to try my first one on Friday!

But I did sneak a little sip before bottling.  I won’t lie – I was a little scared.  BOTTOMS UP!

It had a pretty strong vinegar taste – we’ll see if that goes away a little as the fizz builds.  But I did like it!  And I’m so excited!

So now I have my next batch getting ready (the tea has to cool to room temperature before I can add the culture).  But since this last batch only made 2.5 bottles I’m graduating to a gallon jar this time.

I’ll be up to my eyeballs in the ‘booch soon!  Wahoo!

I don’t practice yoga daily because I also like to lift weights, run, hike and walk.  I’d love to do it daily, but there just aren’t enough hours in the day to do it all, since I still want to do those other things I love.  I’ve read of people who say they have reshaped their bodies with only yoga.  But for me personally, I add it in for flexibility, stress reduction and core/balance work.  Weight training and cardio are where I find the most change to my body.

Growing Like a Mother (My Kombucha, That Is…)

Hi friends!

Thank you all so much for the very sweet and encouraging comments regarding both my attendance at Bauman College and for FitFeat turning one!  I loved reading the messages and they brought serious smiles to my face!

As I sit here typing the draft for this post on Sunday evening, the Broncos/Steelers pre-season game is on our TV in the background.  Can it really be time for football again? Football season to me means pots of hearty veggie chili and curling up with my blanket to watch a game while the leaves are falling outside, or maybe a few snowflakes.  But I’m not ready for that time of year!  I just can’t wrap my brain around the fact that fall is right around the corner.

Fortunately summer is still holding on – it is currently 82 degrees and gorgeous out, at 7:00 in the evening.  That’s the kind of football weather I can deal with!  We’ve really been blessed with a beautiful summer in Colorado this year.  Nice and HOT and plenty of sunshine!

Speaking of sunshine, doesn’t this bottle invoke thoughts of summer?

MSP found a new brand of kombucha tea for me to try, called Vibranz.  (And when we went back to get more, it was already out of stock!  People are crazy for BOOCH!)

Since I only had one bottle, I knew I had to take the opportunity to try my hand once more at making some from scratch.  I have high hopes that this bottle has enough culture in it to get something started.

Before I used it all for my homebrew, I did take a few sips of the Vibranz tea.  And I have to say, I LOVED IT!  I am so happy to know that there is a brand that I can turn to that tastes very similar to the BUBBLY I’ve grown to love.

It was hard not to want to finish the whole bottle, I’ve been so starved for kombucha.  But just in case I have a hard time finding it on the shelves around here, I got busy on the BACKUP PLAN!

Rumor has it that when one is starting their BOOCH BATCH from a previous brew and without a starter culture, it will take about a month before it’s ready.  I have a note on my calendar to check it out mid-September (as it is currently stored down in the dark recesses of our basement!)

I peeked in on it today and it’s GROWING!!  It looks like there is a culture layer on the top!  YES!  But I must confess, it might be one thing to pour a pretty glass of kombucha from a bottle you bought at the store and quite another to pour something that looks like this:

I might have to plug my nose and close my eyes for the first few sips!

What Would You Do?

Hi friends – Happy Weekend!

Before I get to the topics of today’s post, I want to say how much I loved reading your comments about the “Get Hungry” post – lots of really good comments and conversation!  Thank you so much for that and I’m so glad that you guys liked the post so much!  I’ll be sure to include more like that in the future.  If you like what you read here, please pass the link on!  (and you can follow me on Twitter to get FeatTweets!) Do any of you ever watch that show on TV called “What Would You Do?” where they have hidden cameras taping actors doing something morally out of line to see how people respond that aren’t in on it?  I feel like I was on that show today…

This morning I completed my annual CPR/AED course, which is a requirement to maintain my ACE personal trainer certification each year.   I don’t like to be a Negative Nelly (publicly anyway, ha ha!) but the guy that taught our class today was not only dry as the Sahara desert but also completely unqualified to teach people life-saving techniques.  I take it seriously because if I’m ever in a situation where I need to put this training to use, I want to know I am competent at it.  And the steps often change slightly from one year to the next so I want to be sure I’m comfortable with the protocol.  I feel bad for the people in the class today who were first-time attendees – even for those of us that were there for renewal, he was all over the place and completely confusing.  I hope that if I ever need someone to perform CPR on me, they weren’t ONLY trained by this clown.

I’m strongly considering contacting our local Red Cross chapter – it was that bad.

So like the TV show, I’m asking: What would you do? Would you consider calling to let them know that their instructor needs further training before being let loose with a real class or would you chalk it up to him having a bad day and stay out of it?  I’d love to get your input on this!

OK on to fun stuff!

Anyone else still suffering from Kombucha withdrawal?  Have you seen any of the main brands back on the shelves yet?  (Not the pasteurized imposter wanna-be Kombuchas – they don’t count!)  ;)

Since I’d been missing my BUBBLY booch so much, I mentioned recently that I was left no choice but to attempt to make my own.  My first experiment with making Kombucha tea is going the same way my first attempt with sprouting went, which is to say UNSUCCESSFULLY.  :(

I followed the steps to a “T”…

And hid it away to do it’s thing for 2 weeks.

But after 16 days…. I don’t think it’s really growing anything.  Which is a big Bummer with a capital B.  I think that the culture kind of expanded but supposedly I should now have a second culture growing on the TOP of the tea.  But I don’t.

The directions mention that the culture can be damaged by heat so maybe my first mistake was ordering it in the summertime when the box it shipped in had to sit in my mailbox till I got home from work one day – probably BAKING the whole time in our 90+ degree heat.

I refuse to give up!  I’m hearing that kombucha should be back on the shelves in August… so if I can get my hands on just ONE bottle somewhere then I will try again using THAT as the starter rather than the dried one.  I’ll wait until WINTER to order another dried culture if I have to go that route.

Because even when it’s back on the shelves it’d be really nice to save money by making my own anyway!

Cooking Out, FitFeat Style

Good morning blog buds!  I hope that you all had an amazing holiday weekend!

Ours was absolutely gorgeous.  We had PERFECT weather all weekend long.

Saturday morning we got in an hour of Bob’s yoga, followed by a good long dog walk.  Sunday I went on a wonderful hike in the foothills with my good friend Keri of Om of the Rockies.  Monday was another dog walking session in the morning with a long strolling hike in the evening.  We got a ton done around the house and yard and STILL had time to relax.  Every weekend should be a three day weekend, don’t you agree?  I feel refreshed today and ready to take on the new month.

Wahoo it’s finally JUNE!  Love the summer months like you can’t even imagine.

Speaking of June:  in this month’s issue of Women’s Health magazine, they had an article on ‘bikini-friendly burgers’.

I thought the vegetarian Lentil-Quinoa Burger with Sauteed Mushrooms sounded interesting and would be perfect for some outdoor grilling, so I gave it a shot.

Plus the picture was drool-worthy:

So I followed the instructions and busted out six patties:

(it’s not cooking unless you drip stuff on the recipe, right?)

And here is my final product, bunless of course, because I’m already getting plenty of grain/carbs in the burger, so no need to add on a big huge bun.  Just a side of baked kale and a sprinkle of raw goat cheese.

My thoughts on the recipe as it was written:

1.) there was no way that these patties were going to survive the grate of our BBQ grill as they didn’t hold together that well when they were first pressed.  Refrigerating the raw patties helped somewhat but I still ended up ‘grilling’ them on my George Foreman.

2.) there wasn’t a lot of “oomph” to the flavor, even with the cumin and the fresh cilantro.  Add some of your favorite spices if you try this recipe to give it a little pizazz.  I think the burger recipe is a great canvas to play with the flavors – add some Old Bay and dried sea veggies to give it a crab cake feel or some chipotle peppers in adobo sauce for some Tex-Mex heat.   I topped my leftovers with spicy hummus and avocado and it was delicious that way too.

3.) the texture reminded me of the Sunshine burgers, if you are a fan of them (I am!) and they reheated nicely without becoming little hockey pucks.

Definitely give these patties a try – just add your own flair to make them your own!

And no “cookout” is complete without a cocktail, right?  How refreshing does this look:

Gingerade KOMBUCHA TEA – that’s all!!  Mmmm so good!  And tastes even better when you drink it out of a wine glass!

June is a great month to lay off the heavier foods and cleanse the body!  If you feel the need to do some ‘spring cleaning’ of your temple, you could sign up to take Brendan Brazier’s Thrive in 30 Challenge. I’ve done this in the past and really enjoyed watching the video lessons that arrived in my mailbox.

If the idea of a challenge sends you running for the hills, how about making it simple:  get in a green smoothie (blended salad) at least a few times a week as well as a LARGE salad for lunch or dinner.  Up it to doing these two things every day and you’ll be well on your way to a ‘cleaner’, lighter body!

A Kombucha Only Its ‘Mother’ Could Love

Hi friends!

I hope you had a great kick-off to your week.  My Monday didn’t go as planned on the food front (see Day 8 in the Spring Slimdown) and while I started off feeling great, as the day wore on I felt completely fatigued and lackluster.  I had wanted to take the pups out for a good long walk after work since the temperature was in the high 60s but by the time I got home all I wanted to do was put on PJs and snooze.

I’ve already put it behind me and am moving on.  :)   Today the forecast is 78.  WAHOOOOOO!!!  Just hearing the forecast energizes me!  I have a TON of computer work to get done today, so I’m going to be as efficient as I can in hopes of getting an opportunity to enjoy some outside time later on.

Reader Joan (I’m in the Garden Today) has commented in the past on my beloved Kombucha tea and wondered if I drank the “mother” that you often find in the bottle (she’s not a fan of the stringy things!) ;)    You know, I don’t even NOTICE them… usually.

This morning, however, was a different story completely.  I think someone snuck a jellyfish into my Kombucha tea.  Even I couldn’t drink this one.

Looks like something straight out of the lab.  I had to fish it out.  Yeah, I know I threw out what was probably all the good bacteria that I drink these teas for anyway.  I’m still not sorry!  :D

Maybe it’s a good thing the High Country brand of Kombucha tea comes in a DARK BROWN BOTTLE - I better buy those next time instead!

Get Proactive with Probiotics: 3 Non-Yogurt Options

Hi blog buds!

How was your St. Patrick’s Day?   Glad to know some of you might give AVOCADO a try in your future smoothies!  I’m tellin’ ya, it’s GOOD!

Speaking of good things, you all know I’m kind of a freak when it comes to good digestion (almost as much of a freak as I am about getting to sleep on time!)  When my digestive tract goes awry, let’s just say I’m not a happy camper.  Luckily with the my current nutrition habits, poor digestive days are fewer than they used to be.  But that doesn’t stop me from taking PROACTIVE action on a daily basis by taking probiotics every day.

In addition to the digestive benefits, I also like knowing that they give my immune system a boost.

Did you know that about 80% of your immune system is located in your gut?¹  So making sure you have lots of “good” bacteria in there is key to boosting your chances of defending against that coughing co-worker or sniffling friend.  With the change of seasons at hand, now is the time that you’ll notice people getting those spring colds.

Yogurt seems to get all the credit for providing probiotics.  Since I avoid consuming cow’s dairy, yogurt isn’t my go-to choice for probiotics anymore.  Here are my three favorite non-dairy options:

1.) Ultimate Probiotic 12/12 Formula: I take one capsule of these each morning with breakfast (and if I think I’ll need an extra immune boost, like on a day I’ll be in a crowd of people, i.e., flying) I might even take two.  Some say you should take your probiotics on an empty stomach for maximum effectiveness but I have a tendency toward nausea when I take things like vitamins on an empty stomach.  Do what works best for you.

2.) Synergy Kombucha Tea – I drink this whenever the budget allows.  It’s one of my favorite ‘health foods’ and this brand claims to contain Lactobacillus Bacterium and S. Boulardii. 

3.) Good Belly – my friend’s husband started taking this after his doc recommended it for some tummy troubles.  I’d seen them at the grocery store, but passed them by because they were located by the yogurt.  I mistakenly assumed they had dairy in them.  Then I learned that they are DAIRY FREE!  I just started taking these about 10 days ago and while I can’t yet speak to any immune boost, I can say that I have noticed an improvement in …um, ahem… regularity.  :D

Plus who can resist drinking out of a smiley face every morning?
