Last Year: Hallowmas. This Year: Hallowsgiving

Hi friends!

Happy Halloween!  I still can’t believe it’s October 31 and tomorrow will be NOVEMBER!  It really is true what they say about time going by faster as you get older!

While I know it’s not yet Thanksgiving, I’d definitely like to give thanks that we are going to have great fall weather for the trick-or-treaters (65 degrees today!).  Check out last year’s Halloween Eve and Halloween posts – it was the complete opposite!

I’d also like to give thanks that no one was hurt or lost their home in the most recent Boulder wildfire that started on Friday.  Here are a couple of pics I took as I was driving to school on Friday:

When I got to the block where I normally park for the walk to class (in order to avoid paying for parking, I need to park about 5-7 blocks away), the smoke was VERY thick so I decided it would be worth a few extra dollars to park in the paid garage right at the school, just in case they blocked off any streets.  As it turned out, they did evacuate to one block from where I normally park.   About 2 hours into class, the administrator for our building informed us that power for that whole area would be cut and it could happen in 20 minutes or 2 hours.  So we hustled to get our food prepared and our Kitchen Manager washed everything up as we used it.  We didn’t end up losing power while we were there, so we did finish out the day.

The firefighters plan to have the fire 100% contained today.   After the huge fire Boulder had in September, losing 6000 acres and 170+ homes, this is the last thing that community needs.  So I’m glad everyone is safe.

Back to Halloween….!

Allison inspired me to want to carve some pumpkins this year (you  have to click on her name and go check out her pumpkins – they rock!) so we had a couple of our good friends over for dinner and drinks Thursday night, and carved away.

I saved the pumpkin seeds to roast later, and I’ll be delivering some later today to our friends who came to carve!

I did three batches (all were doused in macadamia nut oil): one with nutritional yeast and sea salt, one with soy sauce, and one with some cinnamon, Sucanat, ginger, nutmeg and allspice.  My favorite was the nutritional yeast.

My friends were game to let me try out a school recipe on them, Braised Tempeh with Coconut Curry Sauce served on a bed of Cauliflower Couscous.  I so appreciate that they were willing to try some vegetable protein since I know that’s not something they would usually eat.  I didn’t do any fancy plating while they were here, but I did practice with the leftovers:

From a workout standpoint, this past week was a little lacking (that’s an understatement) so yesterday MSP and I did a solid lower body workout and today we are both feeling the fruits of our labor!  :)   My slow walking should come in handy if/when I transform into a witch this evening for our trick-or-treaters! (If I dress up I’ll be sure to share a pic!)

Recipe, Schmecipe

Have you ever spent a ton of time in the kitchen with a handful of new recipes, only to be disappointed how they turned out and then feeling like you wasted all that time?  (Not to mention feeling like you wasted FOOD?)  That was my day yesterday.

I don’t want to slam the cookbook I used (fortunately borrowed from the library rather than purchased) because 1.) it’s a really well known franchise and 2.) it could very well be that I just happened to pick a few that weren’t total winners.  There are hundreds of recipes in the book, so I’m willing to bet some are really great.

I pulled out three and didn’t care for a single one.  A Chile Rubbed Tequila Seafood dish (too fishy and way too much tequila), a Southwest Cabbage Salad (very acidic and too salty) and a Chilled Cucumber Soup (again too salty).

I put the fish and the cabbage into a corn tortilla and made it into a Fish Taco. That made it a little better.  At least it LOOKED appetizing!

Two words:  Epic.  Fail.

The bright side? Reaffirming that I don’t necessarily need recipes to make something yummy.  Here are are few of this past week’s NON-RECIPE last minute creations:

Scrambled Organic Eggs with Goat Cheese Slivers, Tomato Slices and Grilled Sweet Pepper

Black Bean Burger on a half-bun (topped with sprouts and a ‘Veggie Slice’ uncheese), Sweet Potato Fries and Roasted Mixed Veggies

Pumpkin Brown Rice Breakfast with Cinnamon and Almond Milk

The “Bat Snack”:  Egg Salad (made with Nayonaisse and mustard) flanked by ‘avocado wings’ and garnished with some leftover lemon-infused salmon:

First attempt at homemade sushi rolls using leftovers of brown rice and mahi, adding in some cucumber, carrots, and avocado.  (And of course served on my “Shari’s Sushi” plate from Beth!)

I like simple, easy-to-build meals.  If you know what you like and you throw in a pinch of creativity, the options for healthy eating are endless!

So I say… Recipe Schmecipe!

A Veggieful, Movieful Halloween

Good morning FitFeat Friends!

Hope you had a marvelous Halloween!  From some of the blogs I’ve read this morning, sounds like it was a great holiday for many!  My Halloween was happy indeed.

Started the day with a pumpkin-themed green smoothie which I thought would turn out a crazy brown color by adding the pumpkin puree, but luckily it was still green!

Then out to run a few errands, one of which included picking up this early Christmas present for our kitchen:

I’ve been making splashy messes all over the kitchen when washing greens, so when we got a $10 off coupon for Bed Bath & Beyond in the mail, it was time to make the purchase!  I can’t wait to use it!

Next stops were my two favorite places:  Starbucks and the library!  I had a soy steamer with no flavoring and picked up my “Ani’s Raw Food Kitchen” which was on hold for me at the library.

Later, we decided to go see a movie.  We hit up Whole Foods on the way to grab a portable lunch, sneakily stuffed it into my purse!

I ordered “The Hampden” which was roasted veggies, pesto and feta on a flatbread.  Taking a picture with no flash in the theater does this…

After a brief outdoor stint where I soaked up some vitamin D for the day (yes, I chose outside over yoga) we actually went BACK to Whole Foods for dinner.  We were going to go somewhere for takeout and I couldn’t make up my mind.  All the online menus I looked at and nothing sounded ‘perfect’.  So I asked MSP if we could just do the hot/cold bar at WF, where I could get a few things to please my tastebuds. 

I chose the marinated Gigande Beans, a Quinoa Pilaf, and some sauteed veggies.  And a Gingerberry BUBBLY!!  mmmmm  dinner was FAB!

We scanned through our Netflix on demand movies to find something Halloween-ish without being scary.  (I’m not a fan of scary movies anyway, but after a particularly intense scary movie last Halloween that still has me crazy scared of the dark a year later, we have decided that it’s just best for me NOT to watch them.  MSP does not like to have me underfoot and tripping him glued to him when it’s dark!)   We decided on “Interview with the Vampire”.  I’d never seen it all the way through when it was first released.  And as it turns out, have STILL not seen it all the way through since I konked out about 2/3 into it.  Yes, another night that I was unable to stay awake to see 9:00 p.m.   :)  

And as I figured, this morning when my body thought it was 5:00 a.m. LIKE CLOCKWORK my eyes sprung open.  Only thanks to the time change it was really 4:00 a.m.

I’ll probably do a face plant in my dinner tonight at like 6:15.  If I even make it to dinner….!

Luckily I have a Broncos game to watch in about 30 minutes, so maybe I’ll catch a few winks during that snoozefest game!
