Slider Bar and Dodgeball

Good morning friends!

Busy day yesterday – hence the missing post!  So busy in fact that I didn’t even do my workout until 8:00 PM.  Yes, that’s right… PM.  That is UNHEARD of in my life (I’m a morning exerciser all the way!).  This was definitely a case of the DDSD coming into play and keeping me on track!  I spent so much time  yesterday on homework, business planning for post-graduation, logo-designing, and cooking that the day got away from me.  After dinner I had the choice between writing a post or getting some movement in.  So I figured I better get busy and MOVE!  We played KINECT Sports for about 40 minutes.  Wow, what a crazy workout that is.  In one of the games you have to avoid objects coming at you and it has you jumping up, crouching down, hopping from side to side. They start out one at a time and then next thing you know you are avoiding three or more things at once.  Another one has soccer balls coming at you that you have to hit and they too start coming fast and furious.  We had a blast.  And we enjoyed it so much that this morning we decided to do the same thing for our morning workout, only this time I wore my heart rate monitor.  163 bpm!  We “played” for 54 minutes.

As promised I have some food photos to share with you!

First some afternoon snackage – Chipotle Rice & Adzuki Bean chips and some baked pita chips with hummus.  It seems like it’s been forever since I last had hummus. I’ve missed it!

For dinner, we decided to roll with a SLIDER BAR.  Something about cute little burger-ish sandwiches just makes me grin.  Rather than buy small dinner rolls like I would have in the past, I said to myself, “Shari, you are a culinary student.  You should make your rolls from SCRATCH!”

So that’s what I did.  Using the same school recipe I used for the multigrain gluten-free bread on Thanksgiving, I made them into small balls.

Then we each added our own condiments…

I made mine Salmon Cake style (but on the George Foreman grill rather than fried) and MSP used Colorado grass-fed Lasater beef and of course we had sweet potato fries on the side.

On one of my salmon sliders, I used coarse grain Dijon mustard and homemade red cabbage ‘kraut.  On the other I smeared homemade tartar sauce (Nayonnaise with diced sweet pickles that my mom made) with tomato and cucumber.  Delicious!

MSP’s had cheese on both, ketchup/mustard on one and BBQ sauce on the other.

It was a very fun, very tasty dinner.  If you have kids at home, you need to make a build-your-own slider bar.  They will LOVE it.  I know the “kid in me” does!  ;)

School Shopping & Quick Eats

Hi blog buds!

Can you tell I’m between ‘jobs’ this week?  I’ve been posting a lot!  ;)   Gosh I miss when I could do this every day!

I went to Office Max today to pick up some “school supplies”.  Wow, I used to LOVE this time of year when I was a kid.  I was always a fan of school.  (I still believe that ALL jobs should have summer vacation, just like school did.  We’d be much happier peeps, don’t you think?)  I think it’s probably a good thing that I don’t have kids, otherwise I’d likely go WAY overboard getting them ready to go back to school in the fall.

There’s not much I like more than a brand new notepad:

Much like Carrie Bradshaw did in the original “SATC” movie, I love to open books and sniff the binding.  LOVE IT.  I have done that with the whole stack of my new school books!

My required school shoes, however, are not very “Carrie” worthy:

No Manolo’s allowed – just the standard non-slip, non-marking, closed toe shoes.  Dansko Professional it is, then.  (Thank you to Ryan at Dardano’s for giving me what he called the “Chef’s Discount”.  I haven’t figured out if that’s for real, or if he was just poking fun.  Either way, I’ll take it because the only other shoes I’d drop this kind of cash on in the past have been Nike SHOX.)

BTW, how did I not know how awesome these shoes are before?  I would have purchased a pair for all those jobs where I was wearing heels and running my legs off.  Ugly? YES.  Super supportive and comfy? YOU BET!

I still have items on the list of materials I need to have, but the rest can be purchased after the first day of school.  Getting excited now!

I thought it might be time for another photo journey of some of my recent meals.

An Asian-inspired Pita Pizza (when MSP’s mom was here we were thinking of other variations for the pita pizza).  This one uses sesame oil, a little almond butter and minced ginger as the ‘sauce’ and I topped it with sauteed red cabbage, onion, broccoli, celery, and baby bok choy, and on the top sprinkled with some Chinese Five Spice.  It was a fun twist:

I’d made MSP a dish that included this Sesame Soy Dressing so I used some of it on sliced raw red cabbage and let it marinate overnight into a slaw. Then I topped it with a Salmon Cake that I had coated with ground-up Wasabi Soy Beans (in lieu of breadcrumbs) and lightly pan-fried in  a little almond oil:

A serving of Amy’s Organic Southwest Chili with Beans, that I added some Herdes Salsa to (to boost the veggie content) and topped with sliced avocado.  Truly the speediest meal you can imagine:

A snack of (ugly) baby carrots, hummus with a large flax cracker from my dehydrator and three slim slices of “naked goat” cheese (raw & unpasteurized):

And of course plenty of green smoothies ;) :

On the subject of GREENS:  if you have pets, check out this article on the power of veggies for them.  I often feed both of my dogs green smoothies in addition to their regular dog food (as long as there aren’t things in my smoothies they can’t have, like grapes) because I feel that they can benefit from the nutrients in the veggies.   The article talks about Kale specifically, which is a gold standard of nutrient rich food for humans, so it’s no surprise that it’s helpful for dogs too.  I thought it was interesting and wanted to share it with you!

Summoning Summer with Salmon Cakes

Good morning friends!

Welcome to Wednesday, where winter is in full swing in Colorado.

Crab cakes make me think of beachy, summery weather – which I am DEFINITELY CRAVING at the moment.  I adore crab cakes, especially crab cake benedicts for breakfast when we eat out.  When I saw this photo and recipe in this month’s House Beautiful it inspired me to get bring some summer into my kitchen.

The original recipe is by Dawn Welch (Dollars to Donuts). These are the salmon version of crab cakes and I just happened to have two cans of salmon in my pantry that have been there forever.

Here is my adapted version, which has been substantially changed from the original.

Ingredient gathering mission:

Summoning Summer Salmon Cakes

  • (2) 7.5 oz cans Whole Foods Wild Alaska salmon (remove bones before mixing)
  • 1 cup sprouted grain bread crumbs (dry your Ezekial heels and store till needed, then grind in blender or food processor) divided into 1/2 c and 1/2 c
  • 1/4 cup fat free Nayonaise
  • 1/2 tsp onion powder
  • 1/2 to 3/4 tsp (or to taste) seafood seasoning – I used Phillips
  • 1 egg white
  • sprinkle of sea salt & pepper to taste
  • extra virgin coconut oil for pan frying

Put salmon, 1/2 c bread crumbs, Nayonaise, onion powder, egg white, S & P together in a bowl and mix with large fork or fingers until all ingredients are well distributed and almost ‘creamy’.

Shape into small patties (my batch made 7).

Pour 1/2 c bread crumbs onto plate and press each side of patty onto crumbs to coat.

Heat a generous amount of coconut oil over medium to medium-high heat and fry your salmon cakes on each side until crispy.  You may need to add additional oil even when you flip them in order to get a good brown crisping effect.  Fry 4-5 minutes per side.

I plated mine with a side spinach salad with Goddess dressing.  If I’d had lemon wedges I’d have plated with those too.  But Realemon squeezes would have to do.

These ROCKED!!  I ate two and can’t wait to eat the leftovers today for lunch or dinner.  It felt like SUMMER inside even if it was blizzarding like mad outside.
